British Sausage Week

Monday 3rd of November to Sunday 9th of November 2014

If sausages and mash are your comfort food of choice Bedford Lodge Hotel & Spa has the menu of your dreams.

As part of national Sausage Week, James Fairchild, Executive Chef at the Newmarket four-star hotel’s award-winning Squires restaurant, has cooked up some favourites that are bound to go down well with sausage lovers everywhere.

It is to celebrate British Sausage Week, which champions the “taste quality and diversity” of the great British sausage.

All the sausages on James’ menu during the week, from 3 - 9 November, at Squires are from Newmarket company Powters and the varieties available are cider and sage, real ale, spicy Spanish and traditional Newmarket sausage.

But no sausage would be complete without a helping of mashed potato: “We’ve got your traditional creamed mashed potato, garlic mash, cheddar and chive, or grain mustard, so come and taste,” added James.

Grant Powter, Managing Director of Powters in Newmarket’s Wellington Street, is the fourth generation to be involved in the family business.

He said: “It’s great that local businesses are getting behind local products. We’ve been going since 1881 when my great grandfather started Powters. All our sausages are made to order to a secret recipe.

“And only last year we were given protected status through the European Union via Department For Environment, Food and Rural affairs and were awarded a Protective Geographical Indication, which protects the names and authenticity of quality foodstuffs.”

It puts them on a par with Stilton cheese and the great Cornish pasty, among other foodstuffs to protect the reputation of regional foods and promote agricultural activity.

He added: “It means our sausages can’t be copied outside of the Newmarket area.”

All sausage meals at Bedford Lodge Hotel & Spa are £11.50 and come served with a delicious red wine and shallot gravy. View the menu here

Game Fortnight

Monday 17th - Monday 30th November 2014

Game meat has become much more popular these days thanks to celebrity chefs and the trend to source locally produced foods, which cuts down on transport costs and aids local economies.

James Fairchild, Executive Chef of our 2AA Rosette Restaurant said: “Game is wild, natural and free range and with a distinctive flavour loved by many people. It is also an economical alternative for many households at this time of year.

“I think there is nothing better on a chilly November day and you can be sure that it has created a lower carbon footprint as it does not travel far from farmland to the shop.”

This type of meat has been around for hundreds of years but our ancestors didn’t have the luxury of dipping into the nearest supermarket for a piece of partridge.

On the Squires menu during the fortnight you can spot roasted venison loin in dark chocolate sauce, pressed terrine of Suffolk game and wild-game sausages, or try a bit of wood pigeon or roast partridge.

We have created a menu full of classic game dishes, as always with a modern twist. Explore the menu here.

Gentlemen's Afternoon Tea in Suffolk

This tradition, created by a former resident of Bedford Lodge Hotel & Spa isn't just for the Ladies - we have brought in the best of Great British food and drink to make the ultimate afternoon tea menu just for the Gents.

Afternoon tea is something Bedford Lodge Hotel & Spa holds close to our heart. After all, Anna Marie, the wife of the seventh Duke of Bedford and former resident of the original hunting lodge is credited with the creation of afternoon tea!

Generally afternoon tea is geared toward a female party. However, the Roxana bar has taken inspiration from the classic Gentleman’s clubs and created a tea with a masculine twist.

In keeping with the menu’s dedication to all things British, a selection of all time favourites including finger sandwiches, lemon loaf slice will be served alongside hearty newmarket sausage roll, fresh baked mini pasty and hearty prawn & rosti potato shell, together with a beer, bitter or cyder.

With the bar’s relaxed yet sophisticated setting, the Gentleman’s afternoon tea is the perfect location for the man about town to entertain guests or simply while away the hours with a newspaper, game of poker or backgammon.
