Indian food is different from rest of the world not only in taste but also in cooking methods. It reflects a perfect blend of various cultures and ages. Just like Indian culture, food in India has also been influenced by various civilizations, which have contributed their share in its overall development and the present form.
Foods of India are better known for its spiciness. Throughout India, be it North India or South India, spices are used generously in food. But one must not forget that every single spice used in Indian dishes carries some or the other nutritional as well as medicinal properties.
Our Head Chef James Fairchild explains the menu and why how he created the dishes...
"Bombay potatoes are a very popular side dish in India so we decided to play on this and create a soup using a vegetable base stock to compliment the spices also using coriander oil as a contrast behind the gorgeous yellow colour. The Bhaji, also known as a pakora (originating from Karnataka) is also great as a starter or you could have these as a side with the mains.
For the main course we have Chicken Makhani which is a beautifully creamy dish, originating from Pujabi cuisine developed by the Moti Mahal restaurant in Dalhi. Also we have a delicious vegetable jelfrezi, where we have marinated the vegetables which then we fry to give the sauce a real rich thickness.
On the sweeter side, we have a cardomen cheesecake which is an infusion of English and Indian. A sweet with indian spices also known as a Kulfi, is a traditional Indian sub-continent ice cream. These light desserts are the perfect way to end your meal"

To celebrate our wonderful Queen turning 90 on Thursday, we have decided to dedicate a Full Afternoon Tea menu to her and all her favourite treats starting on Thursday 21st April 2016.
Darren McGrady, a former royal chef, recently offered a rare insight into the normal diet of the Queen when she is not banqueting. She would often enjoy at 1pm, an afternoon tea of cakes, scones and sandwiches.
Mr McGrady reveals her favourite cakes were honey and cream sponge, ginger, fruit and the chocolate biscuit cake that Prince William also chose to be served at his wedding reception.
"At least two varieties of sandwich were offered, such as cucumber, smoked salmon, egg mayonnaise, ham and mustard. The crusts cut off. She also had her favourite jam pennies, tiny raspberry jam sandwiches cut into circles the size of an old English penny and washed down with Earl Grey tea"

To Celebrate St.Georges Day on the 23rd of April we have a whole week dedicated to classic English dishes from 20th-26th April!
The English Week menu consists of great traditional English dishes with a fabulous modern twist! From our delicious Beetroot Soup with its beautiful deep purple colour, to our gorgeous mini Pork & Apple Sausages you will not be disappointed!
Executive Head Chef James Fairchild said "The star of the show is our modern twist on fish and chips, made with our locally sourced, fresh cod loin! We will cook the cod by using a temperature-controlled water bath which produces perfectly cooked, fluffy white cod. (Cooking the fish under vacuum helps to trap the moisture inside the cod and the constant, low temperature of the water ensures the fillet cooks evenly)
Alongside our day aged soaked peas, Scampi, Parmentier Potatoes & Vinegar jel....Definitely not a dish from the chippy on the sea front, but bringing back those mouthwatering memories!"
And no English menu would be complete without a classic bread and butter pudding or rice pudding taking you back to the "Sunday Dinner" days.

Afternoon tea is something Bedford Lodge Hotel & Spa holds close to our heart. After all, Anna Marie, the wife of the seventh Duke of Bedford and former resident of the original hunting lodge is credited with the creation of afternoon tea!
Generally afternoon tea is geared toward a female party. However, the Roxana bar has taken inspiration from the classic Gentleman’s clubs and created a tea with a masculine twist.
In keeping with the menu’s dedication to all things British, a selection of all time favourites including finger sandwiches, lemon loaf slice will be served alongside hearty newmarket sausage roll, fresh baked mini pasty and hearty prawn & rosti potato shell, together with a beer, bitter or cyder.
