Lamb Steaks with Fresh Mint Sauce and Feta
Ingredients 4 Portions
400gr Baby Peppers Deseeded Sliced ½ cm
Extra Virgin Olive Oil (good Glug)
600gr Lamb Steaks (Leg, Chump or Rump)
200gr Feta, broken, crumbled
Seasoning to taste
Sauce
25gr Fresh Mint Leaves
80ml Extra Virgin Olive Oil
10ml Cider Vinegar
½ tspn Caster Sugar
Method
- Heat oven 190 deg C
- Drizzle approx. 40ml Olive oil over the cut peppers and roast for about 35mins, or until lightly charred
- Season and allow to cool
- Blend all the ingredients for the sauce in a blender until smooth
- Season the lamb steaks and Pan fry or grill for a couple of minutes on either side, set by to rest (Ideally for New Season lamb leave it nice a pink, to get the best flavour)
- Arrange the pepper on top of the steaks, crumble over the feta and drizzle a little of the sauce
- Flash this under the grill for a minute and serve
- A hand full of roughly chopped fresh mint is a wonderful addition, serve with either nice fresh crusty bread or new potatoes
