Meet the Chef
Our award-winning Executive Head Chef, James Fairchild breathes new life into traditional dishes and creates contemporary creations at Bedford Lodge Hotel & Spa. He has been instrumental in Squires restaurant retaining its 2AA Rosette rating.
James’ eclectic style and modern artistic flair equips him with the ability to reinvent many celebrated British classics, whilst injecting new concepts and international flavours into our delectable menus and contemporary style of cuisine.
James delivers a wealth of experience spanning 24 years, and during the earlier phase of his career, he served on luxury cruise liners including the iconic, QE2 and the 5 star Sea Goddess II yacht.
In more recent years, he has lent his expertise to the world famous Champneys at Forest Mere and before joining us, James was Head Chef at the Millstream Hotel in Bosham.
James has also attained many notable achievements during his distinguished career and has written food articles and columns in prominent lifestyle glossy magazines, local media and high profile specialist foodie publications. A member of the Craft Guild of Chefs since 2003, James also became a professional member of the “Chaîne des Rôtisseurs” in 2008.
James is passionate about supporting the local community and constantly strives to reduce the food miles our produce has to travel – effectively minimising ‘field to fork’ and maintaining our support of the local economy.
Outside of Bedford Lodge Hotel, James is a keen gardener and family man with 2 young children so much of his time is centred around them and their energetic pursuits!
For rest and relaxation, James enjoys whiling away time in two of his preferred spas and also sampling international restaurants both locally and beyond. Another of his passions is entertaining friends and loved ones with delicious barbeques during the summer and intimate dinner parties during the winter.
